Eggplant & Kale Dip + Tucker’s Natural Giveaway!

I don’t know about you , but when its time to entertain my first instinct is (of course) dip and crackers. But if I’m not making it all myself, there are very few brands that i trust. Even some items from the ‘healthy/organic’ aisle don’t cut my criteria, some could say I’m hard to please but at the end of the day I’m most happy knowing I have nourished my guests well.

Crackers are pretty simple to make, in fact you can find some awesome recipes online (try out Nicola’s Flaxeed Crackers – they are delicious), but it does take time, and preparation, which is difficult if your plans are last minute. That is why I love Tucker’s Natural, particularly their Multifibre Snacks range. Tuckers are an Australian family business who prioritise supporting fellow Australian producers. But mostly, Tuckers use REAL ingredients and keep their products nasty free – no preservatives, artificial ingredients, artificial flavouring, genetically modified ingredients, yeast, soy, MSG OR trans fats.

So when you have your crackers sorted, whipping up a dip becomes much less tedious – but you still want that time efficiency as well as taste and nutrition! That is why I have created this super simple, and super delicious dip. I personally love eggplant dips, but my love is tarnished when i view the ingredients list. Canola oil, colours, flavours and preservatives, numbers instead of words and plenty of ingredients that I wouldn’t recognise if they were under my nose! This recipe – none of that nonsense! Its real, nutritious and rolls with the superfood theme – kale baby!

Eggplant and Kale Dip


– 1 Eggplant 2 tbsp olive oil + salt
– 2 cloves of garlic
– 1 large handful of kale, steamed
– 2 tbsp tahini
– 1 tsp cumin
– pinch of pink salt
Water for consistency
1. Preheat the oven to 180 degrees
2. Roast the eggplant and garlic in the olive oil and a good pinch of pink salt for about 30 minutes
3. Once roasted, remove from oven and blend in a food processor
4. Once the eggplant and garlic are of a smooth consistency, combine the rest of the ingredients in the food processor
5. Add water to get the desired consistency you need.
6. If coriander is your thing, it goes perfectly through this dip but isn’t necessary!

  1. I’m a dippy kind of girl. I love dips! Anything with avocado is wonderful (avocado, kale and garlic works really well!). And hummus is my absolutely favourite way of eating more pulses. I smear hummus on rice cakes, top with semi-dried tomatoes and lunch is excellent!

  2. My favourite is either a cumin roast carrot hummus or balsamic roast beetroot hummus. My toddle absolutely loves them too, such a great way to get extra Veges and protein into his diet.
