A health foodie’s two favourite ingredients and one favourite food have been combined to create a blossoming food baby that should be in everyone’s fridge.
Ultimately, you can eat this granola for breakfast, snacks and desserts. The banana is the perfect addition because it removes the need for the regular amount of (natural) sweeteners that most healthy recipes will require + adds natural fibre and essential vitamins and minerals (particularly potassium!).
Cacao of course is the ‘chocolate’ element and it naturally goes hand in hand with the banana flavour! Super rich in magnesium, a mineral our population is known to be highly deficient in, cacao is the equivalent of a bad girl gone good (the alternative Rhiannon) and makes chocolate (or dark, vegan, raw chocolate) a very real possibility for all those aspiring for a healthy lifestyle (and longer lives!).
This isn’t Gluten Free because I’ve used oats in what I have described as the ‘nut, seed and grain mix’. This is actually where you can mix everything up – make it paleo, make it gluten free, grain free, it’s totally and completely up to you! I chose coconut, oats, chia seed, flax seed and quinoa puffs but the options are limited – choose what you love!
Chocolate and Banana Granola
- 2 cups of your choice of nut, seed and grain mix
- 2 tbsp cacao
- 1 banana, mashed
- 3 tbsp coconut oil, melted
- 1 tbsp organic, local honey
To start, preheat oven to 180 degrees
Mix the wet ingredients in a separate bowl and stir well.
Pour the wet mixture through the dry mix and combine well
Line a baking tray with baking paper, spread the granola over the baking tray and pop it in the oven!
Check every 5 minutes and stir the mixture on the tray. Continue for 20 minutes.
You can enjoy it warm or if you allow it to cool, it will crisp right up!
