Excuse my over use of OITNB (Orange is the New Black) but hey, I’ve been missing my daily dose on account of bingeing on the entire season when it was released on Netflix. It’s my own fault. But thankfully I have this new flour to distract me – Teff flour that is.
Is it the new kale? Is it the new superfood? Is it super healthy for you?
Well, yes. And it’s gluten free. But keeping in mind everything is in moderation too (as in, keep the kale coming!).
Teff flour actually originates from Ethiopia, where it is a key staple to the diet! It’s an ancient grain that is then ground into a flour and it packs a serious nutritional punch!
Teff is great for calcium (note worthy one of Australia’s most deficient minerals), iron, Vitamin C and dietary fibre to help assist with stable blood sugar management. This is a pretty surprising nutritional profile for a grain – which is why I think that it’s a great flour to introduce into your diet! Allow food to be thy medicine – you don’t need supplements when you have a nutrient rich, colourful and variable diet (though, if you are prescribed supplements by a health professional you should MOST DEFINITELY take that advice!).
So, what does it taste like? Well, it’s nutty in taste which make’s it pretty much perfect for everything in my opinion (#nutfan), especially my Pumpkin & Apple Cinnamon Muffins! Find the recipe here, and all I did was substitute the Teff flour where the Brown Rice Flour was! It worked a charm and added a deliciously unique flavour along side the nutritional benefits!
